Chocolate Almond Torte

I made this for a friend's birthday last year, and oh my, was it ever yummo. It's a recipe I found online and messed with slightly.

Ingredients

  • 2/3 cup sliced almonds, toasted (I made it with the almonds untoasted, because I like raw almonds, but toasted would be really good too. I also used way more almonds)
  • 8 (1 ounce) squares semisweet chocolate
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 (.25 ounce) envelope unflavored gelatin
  • 1/4 cup cold water
  • 2 cups whipping cream, whipped

Directions

  1. Set aside 1 tablespoon almonds for garnish (or much, much more, if you happen to be me - I wanted to top the whole shootin' match with sliced almonds). Chop remaining almonds (I added some grated chocolate to this); sprinkle into a 9-in. springform pan with a circle of parchment paper in the bottom. In a microwave or heavy saucepan, melt chocolate; stir until smooth. Cool slightly. In a mixing bowl, beat cream cheese and sugar.
  2. In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Cook and stir over low heat until gelatin is completely dissolved. Beat into cream cheese mixture. Add melted chocolate; beat until blended. Fold in the whipped cream. Pour into prepared pan. Sprinkle with reserved almonds. Cover and refrigerate for at least 3 hours.
  3. Try to resist flat-out licking the bowl. Just try. It's okay if you do though...I won't tell anyone.
