I did not have a mini rose cake pan, so I used the maple leaf pan Matt gave me last year. I am really loving that pan!
This is made from three flours: Quinoa, Rice, and Almond Meal. The result is a nutty and very flavorful little cake. The next batch I'd make, I would use some vanilla bean (mixed in the yogurt) to increase the vanilla-tude. Else, use almond instead of vanilla, to really kick up the almond flavor.
And, since the Olympics are currently taking place in Vancouver BC, the maple leaf isn't too out of place now, is it? This was one of our desserts for Valentine's Day - see my personal blog for full details. (Hopefully Matt will jump on & post the beverage he mixed - because I think it is my new favorite!)
Another almond recipe that I've made this month I do not have pictured, but also contains Quinoa. (I <3 this grain!) Mix cooked quinoa with grilled Italian Sausage, Peppers, Corn, Black Beans, Cilantro, and sliced Almonds. Feta, roasted red pepper dressing, optional. Delicious, and healthy - to the extent of the sausage you use. We picked this recipe up in Tuscon on our recent cycling adventure.
